@albinasveganfood: Who said Jack-O’-Lanterns were only for decorating?😏🎃 Save this recipe for later☺️ Jack-O’-Lantern Stuffed Pumpkin🎃 Ingredients: * 1 medium pumpkin * 10½ oz (300 g) butternut squash * 3 potatoes * 1 carrot * 8 oz (230 g) mushrooms * 1 onion * 2 garlic cloves * A handful of fresh parsley * 1 tbsp flour * 1½ cups (360 ml) plant milk * Fresh rosemary, nutmeg, salt & black pepper * Olive oil, for roasting How to make: 1. Cut the top off the pumpkin and scoop out the seeds and pulp. 2. Cut the butternut squash, potatoes, and carrot into Halloween shapes, and carve little skulls into the mushrooms. Arrange everything on a baking sheet, drizzle with oil, and season with rosemary, salt, and black pepper. Roast at 350°F (180°C) for 25-30 minutes, until tender and golden. 3. In a separate pan, sauté the onion and garlic until fragrant. Add parsley, nutmeg, and flour, then stir in 1½ cups (360 ml) plant milk. Simmer until thick and creamy. 4. Layer the roasted vegetables and creamy sauce inside the pumpkin. 5. Cover with the pumpkin lid and bake at 350°F (180°C) for about 50 minutes, or until the pumpkin is tender. Note: If you’re cutting the veggies into Halloween shapes like I did in the video, have a little extra butternut squash, potatoes, and carrot on hand, since you’ll lose some when cutting out the shapes🎃🌙🦇 #jackolantern #stuffedpumpkin #halloweenfood #halloweenrecipes #pumpkinrecipes
