Recipe Name Slow Cooker Creamy Bacon Ranch Chicken and Potatoes Ingredients 1. Boneless Skinless Chicken Breasts – 2 lb 2. Baby Yukon Gold Potatoes – 1 1/2 lb, halved 3. Bacon – 8 slices, cooked and crumbled 4. Cream Cheese – 8 oz, softened 5. Cheddar Cheese – 1 1/2 cups, shredded 6. Chicken Broth – 1 cup 7. Ranch Seasoning Mix – 1 oz packet 8. Garlic – 4 cloves, minced 9. Garlic Powder – 1 tsp 10. Dried Dill – 1/2 tsp 11. Dried Parsley – 1 tsp 12. Paprika – 1 tsp 13. Salt – 1/2 tsp 14. Black Pepper – 1/2 tsp 15. Fresh Parsley – 2 tbsp, chopped Recipe 1. Pat the chicken breasts dry with paper towels and trim away any excess fat. 2. Season the chicken on both sides with garlic powder, paprika, salt, and black pepper, pressing the seasonings gently into the meat. 3. Arrange the halved baby potatoes across the bottom of a large slow cooker. 4. Scatter the minced garlic over the potatoes, then sprinkle the ranch seasoning mix evenly over the entire slow cooker. 5. Place the seasoned chicken breasts over the potatoes and pour the chicken broth around the sides of the chicken. 6. Cover the slow cooker and cook on LOW for 5–6 hours or on HIGH for 3–4 hours, until the chicken reaches 165°F and the potatoes are tender. 7. Carefully remove the cooked chicken and place it on a plate, then stir the cooking liquid and potatoes gently. 8. Add the softened cream cheese to the slow cooker and stir until it melts completely into the hot broth, creating a creamy ranch sauce. 9. Stir in 1 cup of the shredded cheddar cheese, dried dill, and dried parsley until the cheese melts smoothly into the sauce. 10. Cut the cooked chicken into large bite-sized pieces or slice it into thick strips, then return it to the slow cooker. 11. Sprinkle the crumbled bacon evenly over the chicken and potatoes, reserving a small amount for the final garnish. 12. Sprinkle the remaining 1/2 cup cheddar cheese over the top, cover, and cook for another 10–15 minutes until the cheese is completely melted. 13. Gently spoon the creamy sauce over the chicken and potatoes so every piece becomes coated with the rich ranch-cheese mixture. 14. Garnish with the reserved bacon and freshly chopped parsley, then let the dish rest uncovered for 5 minutes so the sauce can thicken slightly. 15. Serve hot with the tender potatoes and chicken generously covered in the creamy bacon ranch sauce. Follow for more delicious slow cooker comfort food recipes!
