it’s always worth the time to make your grandparents feel extra loved 🥹  for my nana’s 82nd birthday, i last minute decided to make a super fluffy sponge cake (recipe below) with vanilla bean whipped cream and juicy strawberries and homemade sprinkles!!  ive recently updated my sprinkles recipe so its very foolproof and waiting for all your creative designs 🤭 full recipe on my blog at abrightmoment.com (or comment “recipe”)  for the cake: - fresh whipped cream with vanilla bean paste - strawberries (quartered) and tossed with sugar to sit 20 minutes Preheat oven to 350F. Line with parchment paper the bottom of a 9” springform pan (but do NOT grease the sides).  In a bowl, combine 1 cup cake flour (or all purpose flour), 1 teaspoon baking powder, and pinch of salt. Mix very well, then set aside.  Separate 6 eggs (whites in stand mixer bowl) and yolks in a separate bowl.  Beat the whites until frothy, then gradually add 3/4 cup granulated cane sugar. Beat until stiff peaks, then add 1 teaspoon vanilla bean paste.  On medium speed, add the egg yolks one at a time. Sift in the flour mixture and fold together with a rubber spatula until smooth.  Transfer the cake batter into the prepared pan. Bake in the middle rack for 18 to 22 minutes, center is set and top is golden.  Take out of the oven and flip to cool upside down for 1-2 hours (or until completely cooled).
