chocolate s’mores sandwich cookie cookie: 3/4 cup + 1 tbsp (95g) flour 1/4 cup (25g) cocoa powder 1/2 tsp (3g) baking soda 1/4 tsp (1g) salt 1/2 cup (113g) unsalted butter, soft 3/4 cup (150g) brown sugar 2 tbsp (25g) white sugar 1 egg 1 tsp (4g) vanilla graham crackers squares *cream together butter and sugars. then mix in the egg and vanilla until smooth. in another bowl, whisk together the flour, cocoa powder, baking soda, and salt. add the flour mixture into the wet and fold gently to combine. scoop cookie dough (~2-3tbsp) onto a graham cracker square. set the dough in the fridge for at least an hour. bake at 350f for 13-15 min. optional: shape the cookies once out of the oven using a large circle cookie cutter. let cool completely. marshmallow filling: 1/4 cup (57g) unsalted butter 4 oz (113g) marshmallow fluff 1/2 tsp (2g) vanilla paste 1/2 cup (60g) powdered sugar pinch of salt *cream together the butter and powdered sugar until smooth. then add in vanilla and salt, mix well. at the end, fold in the marshmallow fluff gently so it doesn’t deflate. pipe over one of the cookie halves and then sandwich it together. optional: drizzle some melted semi-sweet chocolate and top with graham cracker crumbs
