My all-time favourite breakfast! 😌 Ingredients * 1 glass chickpeas (chana), soaked overnight * 2 small potatoes * 3 glasses water * 5 tbsp oil * 2 white onions * 5 dried red chilies * 1 cinnamon stick * 1 bay leaf * 2 green cardamoms * 1 star anise * 1 tbsp ginger-garlic paste * 3 tbsp yogurt * 1 tbsp black pepper powder * 1 tbsp coriander powder * 1 tbsp cumin powder * 1 tbsp salt, or to taste * Green chilies, to taste * 5–6 eggs * A pinch of turmeric powder * Olive oil, for frying eggs Preparation: Method 1. Soak chana overnight, then pressure cook with potatoes and water for 15–20 minutes. 2. Sauté onions in oil until lightly golden. Add whole spices and ginger-garlic paste. 3. Blend one boiled potato, 2-3 tbs chickpeas and 3 tbs yogurt into a paste. Add to the onions and fry well. 4. Add the spices, chickpea water and salt. Bring to a boil, then add boiled chana and green chilies. Simmer briefly. 5. Lightly fry boiled eggs with olive oil and a pinch of turmeric.
