soup season is here and you NEED to try this delicious jalapeño corn chowder! 😋🌶️🌽🥔🥓 ingredients: - 1lb bacon - 1/2 onion diced - 2 stalks celery diced - 4 garlic cloves minced - 3 tbsp butter - 1/4 cup flour - 2 cups chicken broth (I used 2 cups of water and 2 tsp of chicken bouillon powder) - 2 cups whole milk - 2 russet potatoes peeled and diced evenly - 2 jalapeños diced (take seeds out if you don’t want as much spice) - 1/2 tsp ground thyme - salt & black pepper to taste - smoked paprika to taste - 2 15oz can corn drained - 1/2 cup heavy cream - shredded cheese, bacon bits, green onion and jalapeño slices for serving directions: - cook bacon until crispy. remove and set aside and remove about 1/2 of the bacon grease - cook onion, celery and garlic until fragrant - add butter. once butter is melted add flour and cook down for a few minutes - add chicken broth and milk followed by potatoes and jalapeños. add seasonings. make sure heat is on medium high and bring to a low boil. boil until potatoes are fork tender (not mushy) - bring heat down to low and add corn and heavy cream. simmer for 5 minutes then add a few ladles of soup into a blender and blend until smooth. add the puréed soup back in and mix. simmer for a few more minutes then turn off heat - serve soup and garnish with toppings of choice and enjoy! #soup #soupseason #cornchowder #comfortfood #fallrecipes
