A proud self taught baker😌 Recipe  Moist chocolate cake ( this made 3 layers) Recipe  2 2/3 cups flour (320g) 3 cups sugar 600g 1 1/8 cups cocoa powder 135g 1 tbsp baking soda 17g 1.5 tsp baking powder 6g 1.5 tsp salt 5g 3 eggs 1 tbsp vanilla extract 15ml 1.5 cup buttermilk 350ml 1.5 cup hot coffee 350ml Ganache  10 ounces dark chocolate  10 tbsp butter 140g 1 1/2 cup sugar 300g 1 1/2 cup heavy cream 360ml 1 tbsp vanilla Pinch of salt  Instructions Heat the cream: In a small saucepan, heat the cream and sugar over medium heat until it’s just starting to steam — don’t let it boil. Pour over chocolate: Place chopped chocolate in a heatproof bowl,add butter, vanilla and salt. Pour the hot cream over it and let it sit undisturbed for 2–3 minutes. Stir until smooth: Gently stir from the center outward until the mixture turns glossy and smooth. Set the consistency: Pourable glaze: Use while warm (great for dripping over cakes). Spreadable frosting: Let it cool at room temperature for 30–45 minutes, stirring occasionally. Whipped ganache: Let it cool completely, then whip with a mixer for 1–2 minutes until fluffy and lighter in color. For the chocolate cake Preheat oven: To 350°F (175°C). Grease and line two 8-inch cake pans (or one 9x13 pan). Mix dry ingredients: In a large bowl, whisk together flour, cocoa, sugar, baking powder, baking soda, and salt. Add wet ingredients (except coffee): Add eggs, buttermilk, oil, and vanilla. Beat on medium speed until combined and smooth. Add the hot coffee: Slowly pour in the hot coffee while mixing on low. The batter will look thin — that’s exactly right! (This is what makes it extra moist and deep in flavor.)
