Brown the butter: Melt the butter in a saucepan over medium heat. Cook, stirring occasionally, until golden brown and fragrant. Remove from the heat and let it cool slightly. 2. In a large bowl, combine the browned butter, brown sugar, and granulated sugar. Mix until well combined. 3. Add the egg, egg yolk, and vanilla. Mix until smooth. 4. Add the baking soda, salt, and heavy cream. Mix until combined. 5. Add the flour and mix just until the dough comes together. Do not overmix. 6. Add the 40 g Biscoff cookie butter and mix until incorporated. 7. Gently fold in the 180–200 g white chocolate chips and 40 g crushed Biscoff cookies. 8. Scoop the dough into 80–90 g portions and roll into balls. Gently flatten each one slightly. 9. Place the cookies on a lined baking sheet. Gently flatten each one slightly, then refrigerate the cookie dough balls for at least 1 hour. Before baking, add one small square of white chocolate and a little Biscoff cookie butter on top of each cookie 10. Bake at 350°F (175°C) until the edges are golden brown and the centers are still slightly soft. 11. As soon as the cookies come out of the oven, add extra white chocolate pieces on top and a little more Biscoff cookie butter if desired. 12. Add ½ of a Biscoff cookie to the side of each cookie. 13.
