@dinner_at_hols: CREAMY CHICKEN, BACON & GNOCCHI SOUP 🤌🏼 . Episode 5 of What’s for Dinner… and this is the soup that managed to convert Woody 😂 . He’s always been dead against soup for dinner because, in his words, “I don’t want a drink for my dinner,” so naturally, I took that as a challenge! 😅 . This one is creamy, hearty and full of chicken, bacon, pillowy gnocchi and finely chopped veggies. It’s also a brilliant way to use up leftover cooked chicken, and it definitely counts as a proper dinner! . Serves 4 . Ingredients . 150g bacon lardons 1 onion, finely diced 2 peppers, finely chopped 100g tenderstem broccoli, finely chopped 2 garlic cloves, grated 1 tbsp tomato purée 1 tbsp white wine vinegar or 50ml white wine 3 tbsp plain flour 800ml chicken stock 200ml semi-skimmed milk 1 tsp dried parsley 1 tsp dried oregano 1 tsp dried chives 500g gnocchi 350g cooked chicken, shredded or diced Salt and black pepper, to taste . Method . Add the bacon lardons, onion, peppers and tenderstem broccoli to a large pan over a medium heat. Cook until the bacon is cooked through and the vegetables are soft and tender, stirring regularly. Add the garlic, tomato purée and white wine vinegar or white wine and cook everything together for another minute. Add the flour, stir well and cook it off for around a minute. Gradually pour in the chicken stock and semi-skimmed milk, a little at a time, stirring continuously until everything is combined and there are no lumps. Add the dried parsley, oregano and chives, then stir well. Add the gnocchi and cooked chicken. Bring to a gentle simmer and cook for around 5–7 minutes, stirring occasionally, until the gnocchi is tender and the soup has thickened. Season to taste, spoon into bowls and serve with plenty of crusty bread for dipping. Enjoy! . No leftover cooked chicken? . Cook 500g raw chicken breast before starting, then shred or dice it and add it to the soup with the gnocchi. You can cook it in the air fryer or dice it, cook it in the pan first and remove it before adding the bacon. . Calories - 565 Protein - 45g . Crusty bread isn’t included in the macros.
