Save this one for your first soup of the season! Ingredients: - 2 tbsp butter - 1/2 onion, finely diced - 2 medium zucchini, diced - 4-5 cloves garlic, minced - 5 cups frozen corn - 2 medium russet potatoes, diced - 4 cups Kettle & Fire chicken bone broth - 1 tbsp honey - 1/2 cup heavy cream - 1 cup shredded gouda cheese (+ more for topping) - 1 cup shredded cheddar cheese (+ more for topping) - Green onions - Bacon - Salt, pepper, garlic powder, thyme, red pepper flakes Instructions: - Melt the butter in a large pot over medium heat. - Add in onion and zucchini and sauté until softened. - Add in garlic and mix for 1 min. - Add in corn and potatoes and mix well. - Season with the seasonings listed above. - Add in Kettle & Fire chicken bone broth. - Bring everything to a boil, then cover and simmer until the potatoes are fork tender. - Remove about half of the soup and set aside. Blend the remaining soup until smooth and creamy, then stir the reserved half back into the pot. - Add in honey, heavy cream, and season again. - At this step you can taste for seasonings and adjust as needed. - Now for the best part… add in both cheeses and stir until melty. - Plate it up with some extra cheese, lots of cripsy bacon, green onions, and red pepper falkes.
