BLUEBERRY MUFFINS with vanilla cream and blueberry compote 🫐 Muffins * 1½ cups (185 g) all-purpose flour * 1¼ tsp (5 g) baking powder * ¼ tsp (2.5 g) baking soda * ¼ tsp (1.5 g) salt * 3 tbsp (42 g) salted butter, melted * 2 tbsp + 2 tsp (40 g) neutral oil * ½ cup (100 g) granulated sugar * 1 egg, room temperature * ½ cup (120 g) buttermilk, room temperature (or ½ cup milk + 1½ tsp lemon juice or apple cider vinegar) * ¼ cup (60 g) Greek yogurt or sour cream, room temperature * ¾ cup (100 g) fresh or frozen blueberries * 1 tbsp all-purpose flour (for coating the blueberries) Crumble * ⅓ cup (60 g) all-purpose flour * 3 tbsp (40 g) light brown sugar * 3 tbsp (40 g) salted butter, softened Blueberry Compote * 1½ cups (150 g) blueberries * 2 tbsp (30 g) granulated sugar * 1 tsp (3 g) cornstarch * ½ tsp vanilla extract * ½ cup (50 g) fresh blueberries Vanilla Whipped Cream * ¾ cup (180 g) heavy whipping cream * ½ tsp vanilla extract (optional) Instructions 1. Preheat the oven to 220°C (425°F) and line a 6-cup muffin pan. 2. Make the crumble by mixing the flour, brown sugar, and butter until coarse crumbs form. Refrigerate while you prepare the batter. 3. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. 4. In a separate bowl, whisk together the melted butter, oil, sugar, and egg. Add the buttermilk, Greek yogurt, and vanilla, and whisk until smooth. 5. Fold the dry ingredients into the wet ingredients until just combined. Do not overmix. 6.
