Pat the red snapper fillets dry with paper towels. 2. Whisk together Dijon, olive oil, lemon juice, zest, garlic, oregano, thyme, basil, optional honey and black pepper. 3. Lightly season the fish with salt, pepper and smoked paprika. Brush generously with the mustard marinade. 4. Refrigerate for 15–20 minutes. Avoid marinating much longer because the lemon juice can begin changing the texture of the fish. 5. Preheat the grill or grill pan to medium-high heat. Clean and lightly oil the grates to help prevent sticking. 6. Place snapper on the grill, skin-side down if your fillets have skin. Grill for approximately 4–5 minutes. 7. Carefully flip and cook for another 3–4 minutes, depending on thickness. 8. The fish is ready when it flakes easily and reaches 145°F in the thickest part. 9. Whisk together the lemon-herb finishing ingredients. 10. Transfer the snapper to plates and spoon a little lemon-herb mixture over each fillet. 11.
