@thegirldinnerdiaries: Because you LOVED my lasagna soup, we NEEDED an Alfredo version✨🍂 CREAMY CHICKEN ALFREDO LASAGNA SOUP✨ sooo COSY, warm, creamy and basically everything you love about chicken Alfredo and lasagna. Ultimate comfort food for a chilly autumn evening and honestly… I think this might be my favourite version yet.🫶🏼🫶🏼 Ingredients (serves 4-5) • 500g chicken breast (2-3 fillets) • 2 tbsp olive oil • 1 tsp Italian seasoning • 1 tsp paprika • 1 tsp garlic powder • 1 tsp salt • 1 tsp black pepper • 40g salted butter • 3 garlic cloves • 700ml chicken stock (or cubes & water) • 300ml whole milk • 300ml double cream • 1 tsp Italian seasoning • 1 tsp dried oregano • 1 tsp black pepper • Pinch of nutmeg • Pinch of dried mustard • ¼ tsp chilli powder • 250g lasagne sheets, broken into pieces • 60g Parmesan, freshly grated • 50g grated mozzarella 👩🏼‍🍳 1. Cut up your chicken 2. Heat the olive oil in a large pot and cook the chicken, add in your Italian seasoning, paprika, garlic powder, salt & pepper. Cook until golden. Remove from the pan and set aside. 3. Add the butter to the same pan, followed by the garlic, and cook for around 30 seconds. 4. Pour in the chicken stock, milk and double cream, then add the Italian seasoning, oregano, black pepper, nutmeg, dried mustard and chilli powder. Bring to a gentle simmer. 5. Break the lasagna sheets into pieces and add them to the pot. Cook for around 10–15 minutes, stirring regularly, until the pasta is tender. (The sheets might stick a little, keep stirring and separate any big clumps) 6. Add the chicken back into the pot and allow it to warm through. 7.
