@beyondfoodmarket: Replying to @atk_wolfy Someone challenged me to make a meal for ONE person for just 75¢… 👀 I went to the co-op and bought just enough rice for 55¢, then stopped at another store and grabbed one fresh nopal (cactus paddle) for 25¢. TOTAL: 80 CENTS. 🌵🍚 I missed the challenge by only 5¢! 😂 I came home, cooked the rice in my rice cooker with a little olive oil and sea salt, then sautéed the nopal on my griddle with olive oil. Then I plated the rice, laid the nopal right over the top, finished it with some black pepper… and that was dinner. 80 cents. Simple. Plant-based. And DELICIOUS. And don’t let the price fool you — there’s some serious nutrition packed into this simple meal. 🌱 Estimated nutrition for the whole plate: 🔥 ~400 calories 💪 ~7–8g protein 🍚 ~70g carbohydrates 🥑 ~9–10g fat 🌱 ~3–5g fiber 🌵 Nopal provides fiber and naturally contains vitamin C, magnesium, potassium, calcium and antioxidants. 🍚 Rice gives you carbohydrates for energy, plus some protein and B vitamins. 🫒 Olive oil adds monounsaturated fats and vitamin E. For 80 CENTS, I turned a couple of incredibly simple ingredients into a beautiful, satisfying plant-based meal. What should my NEXT budget challenge be — 75¢ again, $1, or $1.50? 👇 #Bud#BudgetMealsa#PlantBasedMealsp#Nopalf#AffordableEatingyondFoodMarket
