@beefbaecon: 💨🌆🥩 SMOKE OUT I planned an afternoon BBQ and pool day for a few of my buddies. However, we woke up to everything smelling like smoke and the sky glowing orange from the wildfires up north. The boys still wanted to rally, so the show must go on 🤷🏻‍♂️ None of these shots have filters. It legitimately felt like we were grilling on Mars. 🥩 STEAKS Generously seasoned with a 6:1 kosher salt-to-MSG blend, then onto a wire rack uncovered in the fridge overnight. Flipped once in the morning for even seasoning and drying. Grilled in stages and served on a garlic butter & herb sizzle platter. *I’m at my parents’ place, so no, these are not my ideal choice of knives 😂 🍗 CHICKEN Bone-in, skin-on chicken thighs marinated overnight in pimento paste, lime, soy sauce and garlic. Grilled asado-style, high above the coals, for maximum crispy skin. 🌭 SAUSAGES Sausages grilled and gently smoked over indirect heat, quickly cooled and sliced. Plated and topped with the leftover cheese from the spinach dip. 🍤 SHRIMP Things got a little chaotic trying to get everything served hot and my phone died so I missed the shrimp cook.
