Line with parchment paper the bottom of a 9” springform pan (but do NOT grease the sides). In a bowl, combine 1 cup cake flour (or all purpose flour), 1 teaspoon baking powder, and pinch of salt. Mix very well, then set aside. Separate 6 eggs (whites in stand mixer bowl) and yolks in a separate bowl. Beat the whites until frothy, then gradually add 3/4 cup granulated cane sugar. Beat until stiff peaks, then add 1 teaspoon vanilla bean paste. On medium speed, add the egg yolks one at a time. Sift in the flour mixture and fold together with a rubber spatula until smooth. Transfer the cake batter into the prepared pan. Bake in the middle rack for 18 to 22 minutes, center is set and top is golden. Take out of the oven and flip to cool upside down for 1-2 hours (or until completely cooled). I recommend flipping upside down on a wire rack to make sure moisture isn’t trapped in the pan. #birthdaycake #cakerecipes #birthdayinspo #grandparents #dollyparton
