Preheat oven to 400°F (200°C). 2. On a baking sheet, toss cauliflower, bell peppers, carrots, and red onion with 1 tablespoon olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized. 3. In a large bowl, combine cooked lentils, roasted vegetables, arugula, and parsley. 4. In a small bowl, whisk together tahini, turmeric, lemon juice, remaining olive oil, salt, and pepper to make the dressing. 5. Pour the dressing over the salad and toss gently to combine. 6.
