Slice up andouille sausage. 2. Season chicken thighs with onion powder, garlic powder, paprika, salt, red chili flakes, and Cajun seasoning, then mix well. 3. In a pan, cook andouille sausage until crispy and remove from pan. 4. Add chicken thighs to the pan and let cook. 5. Add butter, minced garlic, chopped bell peppers, celery, and onion to the pan. 6.
