But there’s a big difference between knowing that and actually being inspection-ready. Here are five red flags I see: 🚩 You only start completing your food safety checks and records when you hear an EHO might be coming. 🚩 Your staff can follow the rules, but can’t explain why they’re doing things that way. 🚩 Fridge temperatures, cooking checks or other records are being filled in retrospectively. 🚩 There are obvious cleaning or maintenance issues that everyone has got used to ignoring. 🚩 If I asked three members of staff the same food safety question, I’d probably get three different answers. The reality? Being ready for an EHO inspection isn’t about having perfect paperwork or doing a massive clean the night before. It’s about being able to show that food safety is actually being managed every day. And usually, an EHO can tell the difference pretty quickly.
