One-pot lasagna! For when you want lasagna but can’t be bothered!  Cook dinner with me! This is one of my kids’ favorites!  For 6-8 servings: 1 lb lean ground beef 1 onion, chopped 1-2 tbs dried basil 1 tbs Italian seasoning 1-2 tsp salt (more if desired) 1/4-1/2 tsp red pepper flakes 1-2 tbs chopped garlic 6 ozs tomato paste  6 ozs red wine (optional) 28 ozs crushed tomatoes 1-2 small pinches baking soda 1 pound radiatori or rotini pasta, dry 1 28oz can full of water       For the cheese topping: 15-16 oz ricotta cheese 1 cup grated Parmesan 1/2-1 tsp salt 2 tsp dried basil 1 tsp garlic powder 1-2 tsp onion powder Black pepper 1 cup or more shredded mozzarella cheese for the top. In a Dutch oven, brown your meat well.  Add your onions, garlic, herbs and red pepper flakes, salt and saute.  Stir in your tomato paste and cook for a few minutes.  Deglaze your pan with red wine or water.  Add your crushed tomatoes and 28ozs of water (use the tomato can to measure the water). Taste and adjust your seasonings.  Brink your sauce up to a simmer and let it cook for 10-15 minutes.  Stir in your dry pasta and continue to simmer for 10 minutes or so until you pasta is almost done.  Stir occasionally.  When your pasta is almost done, mix together your cheese topping and spoon it all over the top of your pasta in golf ball sized dollops. Do Not Stir!  Top it with shredded mozzarella cheese.
