This Brown Butter Peach Coffee Cake is everything summer baking should be-soft, buttery cake packed with juicy peaches, topped with a thick cinnamon streusel and a honey butter glaze 🍑 Ingredients: Peach cake: ⁃ 1/2 cup unsalted butter; browned ⁃ 1 1/2 cup all-purpose flour ⁃ 1 tsp baking powder ⁃ 1/2 tsp baking soda ⁃ 1/2 tsp salt ⁃ 3/4 cup dark brown sugar ⁃ 1 egg ⁃ 1/3 cup sour cream ⁃ 1/3 cup whole milk ⁃ 1 tsp vanilla extract ⁃ 2 cups diced yellow peaches Streusel: ⁃ 1/2 cup all-purpose flour ⁃ 1/3 cup dark brown sugar ⁃ 1 tsp cinnamon ⁃ 1/4 tsp salt ⁃ 4 tbsp unsalted butter; softened Honey butter glaze: ⁃ 2 tbsp unsalted butter ⁃ 1 tbsp honey Instructions: Preheat oven to 350°F (175°C). Grease an 8x8 baking pan and line with parchment paper. Set aside. Brown Butter In a small saucepan, melt butter over medium-high heat, stirring constantly. Continue cooking until it turns golden brown and smells nutty. Immediately transfer to a heat-safe bowl to cool. Streusel Topping In a small bowl, combine streusel ingredients and mix until coarse crumbs form. Set aside. Dry Ingredients In a medium bowl, whisk together: ⁃ All-purpose flour ⁃ Baking powder ⁃ Baking soda ⁃ Salt Set aside. Wet Ingredients In a large bowl, whisk together the cooled brown butter and brown sugar until combined. Add the egg, sour cream, milk, and vanilla extract and mix until smooth. Combine Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix. Fold in the diced peaches. Bake Pour batter into prepared pan and evenly sprinkle streusel on top. Bake for 38–42 minutes, or until a toothpick inserted in the center comes out clean. Optional Honey Butter Drizzle Melt 2 tbsp butter and mix with 1 tbsp honey. Drizzle over warm coffee cake before serving.
