part 3 of my 10 dozen sourdough dinner roll order  5:30 am and it was officially time to start baking, it was still dark outside 🙃 after their overnight cold proof, these had risen so beautifully that they didn’t need any additional proofing at room temperature. i pulled each batch straight from the refrigerator, brushed them with an egg + milk wash and put them right into a 350°f oven. each batch took exactly 30 minutes. i bake mine to an internal temperature of at least 195°f. if the tops are getting as golden as i want before the centers are done, i just gently lay a piece of foil over the top and let them finish baking. and obviously i had to taste one with a little whipped strawberry butter and a maple brown sugar latte! soft sourdough dinner rolls - 12 rolls 250 g whole milk 120 g active sourdough starter 1 large egg  30 g honey 20 g granulated sugar 450 g all-purpose flour 10 g buttermilk or dry milk powder 8 g fine sea salt 60 g unsalted butter, softened egg wash 1 egg 1 tbsp whole milk melted butter for brushing after baking add everything except the softened butter and mix until completely combined. cover and let the dough rest for about 1 hour. after the rest, work in the softened butter until fully incorporated and the dough is smooth and elastic. bulk ferment until the dough is beautifully risen and puffy. divide and shape into 12 rolls. cover and refrigerate overnight. in the morning, if the rolls are already fully proofed and puffy, they can go straight from the refrigerator to the oven - no need to bring them to room temperature. brush with the egg + milk wash. bake at 350°f for about 30 minutes, or until the center of the rolls reaches at least 195°f. if they’re getting too brown before reaching temperature, loosely cover the tops with foil. brush with melted butter while warm. #sourdough #sourdoughdinnerrolls #homebakery #sourdoughbaking #breadmaking
