ourmidwestroots I LIVED THIS, remember? It sucked 🥲 Generators only last so long when fuel isn’t available. Every gas station local to us was DRAINED when a tornado and derecho hit in the same night. Propane, gone. All of it, gone. It was a sad reality that the life we live truly is more fragile than we think or ever could realize. We had spare fuel but it only lasts so long, solar is great but it also isn’t perfect. There really is no perfect solution but you know something that can’t go away, the skills you learned along the way. Learning to can before that tragedy happened saved our butts! We were able to take a lot of what we had to family members homes that weren’t effected and canned up the rest to make it shelf stable. It was such a blessing to have these skills and family that was able to help ❤️ Canning meat is simple but it’s best to practice now vs scrambling in a disaster. Cut meat into 1” cubes, you can either brown and partially cook or raw pack like you see me doing here. Fill to 1

Fill to 1" headspace and add 1tsp salt to quarts, 1/2tsp salt to pints, fill with water the rest of the way to the 1” headspace line. Debubble with a plastic utensil, wipe your rim clean with vinegar, and then add a new lid and ring to finger tightness. I processed mine for 90 minutes at 11lbs pressure, per my altitude and canners guidelines. Check yours to see what it would be for you! Remove and set to a towel to cool for 24 hours before removing rings, washing jars and storing.
