I make mine with a small “party” ham. Dice it small so there’s a nice bit of ham in every bite. Lots of onion. Seasonings vary with what’s in the pantry. Served over cornbread, this is a total, complete, and satisfying meal. And I’ve talked myself into it. We’re having peas and cornbread tomorrow. 👍👍😁😁
