My take on Mango Sago 🥭 Ingredients: 12 oz Tapioca pearls (Sago) 6 Fresh mangoes (diced) 1 Additional fresh mango (for the puree) ¼ cup Milk (for the puree) 1 can (16 oz) or to taste- Condensed milk 1 container/can (16 oz) Table cream (or any fresh cream) Step-by-Step Instructions: 1. Prepare the Sago (Tapioca Pearls) Bring a large pot of water to a rolling boil. Add the 12 oz of tapioca pearls to the boiling water. Cook on medium heat for 15 minutes, stirring occasionally, until the white center of the pearls disappears and they become completely clear. Turn off the flame and let the pearls sit in the hot water for a few minutes until they are entirely translucent. Drain the pearls and rinse them thoroughly under cold water to stop the cooking process and remove excess starch. Set aside. 2. Make the Mango Puree & Base Dice the 6 fresh mangoes into bite-sized pieces and place them into a large mixing bowl. Chop the 1 remaining mango and place it into a blender cup. Add the ¼ cup of milk and blend until completely smooth. Pour this fresh mango puree into the large bowl over the diced mangoes. 3. Combine and Chill Pour the 16 oz of condensed milk and 16 oz of table cream into the bowl with the mangoes. Add the washed and cooled sago pearls to the mixture. Stir everything together gently until well combined and perfectly creamy. Place the Mango Sago in the refrigerator to chill for at least 4 to 6 hours before serving 🤤
