INGREDIENTS: ● Smoked sausage – 150–180 g ● Eggs – 3 pcs ● Round wheat tortilla – 1 pc ● Sweet bell pepper – 1/2 pc ● Mozzarella cheese, grated – 130–150 g ● Salt – to taste ● Vegetable oil – for frying INSTRUCTIONS: 1. Lightly grease a frying pan with vegetable oil. 2. Slice the smoked sausage into thin rounds, about 1–2 mm thick. 3. Arrange the sausage slices across the bottom of the pan. 4. Lightly sprinkle some grated mozzarella over the sausage. 5. Whisk 3 eggs with salt and pour the mixture evenly over the sausage. 6. Cover with a lid and cook until the egg mixture is partially set. 7. Place a round tortilla on top of the eggs. 8. Carefully flip everything using a spatula or a plate, so the tortilla is now on the bottom of the pan. 9. Slice the sweet bell pepper into thin rings and arrange them over the top. 10. Sprinkle with another 120 g of grated mozzarella. 11. Cover with a lid and cook until the cheese is completely melted and the tortilla becomes golden and crispy. 12.
