Today, I whipped up this Cantonese-style steamed salmon for dinner. I wasn’t planning to make a video, but I thought it’d be cool to share a simple weeknight meal I throw together! This steamed salmon is a classic, but I spiced it up with some Sri Lankan curry powder, chili powder, and fish sauce. I didn’t have any oyster sauce on hand, but it still turned out to be a weeknight banger! Ingredients: 480g Tasmanian salmon fillets  3 spring onions (whites and greens separated, thinly sliced)  3-inch knob of ginger (sliced & half julienned)  Pinch of Sri Lankan curry powder  Pinch of chili powder  White pepper to taste  3 tbsp neutral oil  1 tbsp sesame oil  Coriander leaves  Sauce: 2 tbsp soy sauce  1 tbsp dark soy sauce  2 tsp Chinese cooking wine  2 tsp fish sauce  1/2 tsp sugar  Instructions: 1. On a plate, lay down some spring onion greens and place the salmon on top.  2. Insert ginger slices between the fillets and season with curry powder, chili powder, and white pepper.  3. Steam in a large pot for about 10 minutes. Use a chopstick to check if the salmon is cooked through.  4. Meanwhile, combine all the sauce ingredients and set aside.  5. Once the salmon is done, remove excess water, then layer the julienned ginger and sliced spring onions on top.  6. Heat the neutral oil and sesame oil until just before they start smoking, then pour the hot oil over the aromatics on the fish.  7. Pour the prepared sauce around the fish.  8.
