There’s another esa bagel shop up around 52nd street, near the Pod Hotel. Every morning for a week was spent trying different bagels. It was excellent

Bagels - Actually they’ve done studies on this, believe it or not. It has nothing to do with the nyc tap water. It’s the non-diastatic malt in the bake and the boil, plus a 12-36 hour cold proof.
