I always take everything. organs (for dog food), bones (for morrow), fat (for tallow), trimming (for beef stock), and the rest is roasts, steaks, stew cubes, and ground beef. this brings me as closest as possible to the hanging weight

I don’t think you’re proving a point. People want an ESTIMATE. You could sell way more half beef if you could give a very ROUGH ESTIMATE. If it’s off a few hundred dollars…so what. At least we know where we stand. Half beef buyers are prepared to pay. Just give the damn ESTIMATE.

Rail weight is indeed not a fair way to price beef. It takes a lot less effort to grind everything than it does to cut up everything into proper cuts. Therefore the customer who gets more ground beef ends up paying for some of the customers who get more select cuts

i got a full beef, the cutting and wrapping cost about $1200. That didn’t cover the actual beef itself. That i had to get from the rancher then i paid the butcher separate . Do i have any idea how much final weight product i have, nope no idea. I know it filled my freezer and last about a year. I have 6 roasts left, some steaks and a but of ground beef left. Due for a new beef in november or so. Also the cost of the cutting and wrapping can change if you want a lot of things like jerkey, pepperoni and pre made patties.

Poor communication on the sales side, customers need to know an estimate of what they could potentially expect. While I agree with the pricing structure, people need to see an example of what the average person would get and pay. I’d even encourage some set packages so a customer could simply say “that one” and you have an estimated price.

For those struggling - rail weight price is the cost of the beef, based only on its weight. If you want the half side portioned into cuts, you still pay for the bones, fat etc, even if you don't want them. If you only want premium cuts - you need to pay the trimmed price, as per a normal butcher charges.
