🍪🥛 Mini Cookie Cereal 🥣 This and Sunday morning cartoons 🥹 arguably the best exercise of free will is that you can make a big jar of mini cookies and have them like cereal..and nobody can stop you 😆 and they’re as delicious as they are adorable. 🔖 Save the recipe for a nostalgic breakfast! Ingredients: 114 g unsalted butter, softened 50 g granulated sugar 100 g light brown sugar, tightly packed 1 large egg, room temperature 1 tsp vanilla extract 185 g all purpose flour, sifted 1/2 tsp baking soda, sifted 1/2 tsp salt 180 g semi sweet mini chocolate chips, set aside 25g Preheat oven to 330˚F/165˚C non-convection. Line a baking sheet with parchment. In the bowl of a stand mixer with paddle attachment, beat butter and both sugars for 5 minutes on medium/high speed until creamy and light, scraping down the bowl as needed.
Add egg and vanilla, beating well and scraping down the bowl.
In a separate bowl, sift and whisk flour, salt, and baking soda . Add the flour mixture to the creamed butter on low speed, mixing until just incorporated. Fold in mini chocolate chips, set aside 25g to top mini cookies. Transfer small amounts of the batter to a doubled up piping bag (easier to pipe). Cut a 1cm hole at the tip or use a 1cm round piping tip like I did. Pipe lines of dough as shown onto parchment. Freeze until firm. Cut small pieces of about 1-1.5cm. Roll into balls. Add reserved additional mini chocolate chips - they’ll look very cute!
Bake one cookie sheet at a time for 6-8 min (I baked 6 minutes because my cookies were very small), until edges are just turning golden. Do not overbake! Allow cookies to cool on the baking sheet 5 min then transfer to a rack to cool completely. Store in an airtight container with a piece of bread or a tortilla - great tip to keep them soft! Serve as you would cereal with milk. Enjoy! 🍪❤️ #cookies #breakfast #cute #baking
