Roasted Brussel Sprouts With Bacon and Balsamic!!! Brussels sprouts, Roasted Sticky, delicious. I took a thick slab of smoked bacon, sliced it into proper strips, and let it render down in a cast iron skillet straight over the flames. Pulled out the crispy bits, left that golden fat behind. Then came the sprouts halved, raw, and full of potential. Straight into the pan, into that bacon fat, with a knob of butter to wake them up. Roasted hard until they blistered, caramelised, picked up colour and smoke. Then came the glaze deep, dark balsamic. A generous pour, just enough to coat and cling. Let it reduce into those charred edges. Meanwhile, I pickled red onions: sliced thin, thrown into a jar with spices and blasted with boiling vinegar. Sharp, bright, and ready. Spoon that tangy onion on top of the hot pan the fat, the sweet, the acid. That’s it. No fluff. No garnish.
