juicy, low-effort scallion chicken in under 30 mins 🍗 one of those recipes that tastes like you put in a lot more effort than you actually did.  made this using the steam function on the Panasonic NN-CS89 Steam Combination Oven — love a multifunctional appliance that saves us from having too many appliances on the countertop. besides steaming, it can also microwave, bake and grill, so it pretty much covers most of our everyday cooking needs in one! steaming is especially good for this recipe because the chicken stays really tender & juicy + you get all that flavourful chicken broth at the bottom — definitely don’t throw that away because it goes straight into the scallion sauce 🤤 what you’ll need: • chicken — any parts you prefer, I used chicken drumsticks • ginger • spring onion • red dates • cooking oil • soy sauce • oyster sauce • chilli flakes • sesame oil • sugar / salt to taste 01 — steam the chicken place the chicken on a plate with sliced ginger, spring onion and a few red dates. steam for around 20 mins or until the chicken is fully cooked through. 02 — make the scallion sauce finely chop a generous amount of ginger + spring onion and place in a heatproof bowl. heat up a few tbsp of oil until hot and pour it directly over add soy sauce, oyster sauce, chilli flakes + a small drizzle of sesame oil. add a little sugar/salt if needed and adjust everything to taste. 03 — shred & mix once the chicken is done, remove and shred it. save all the chicken juices/broth left from steaming and mix that into your scallion sauce — this makes it extra flavourful! add the shredded chicken back in, toss everything together until well coated and serve over hot rice 🍚 super juicy, savoury & fragrant and honestly such an easy weekday meal to put together 🤍 save this for your next lazy dinner!
