Stir well to coat the turkey evenly. 3. Add the tomato paste and cook for about 1 minute. Stir in the lime juice and honey, then cook for another 1-2 minutes until the mixture is slightly caramelized. 4. Mix all the smoky sauce ingredients in a small bowl until smooth and creamy. 5. Combine the tomato, red onion, cilantro, lime juice and salt to make the fresh salsa. 6. Heat a little oil in a clean skillet. Add one tortilla and sprinkle mozzarella over one half. 7. Add some of the turkey filling and a little more mozzarella, then fold the tortilla in half. 8. Cook for 2-3 minutes per side until golden and crispy. Repeat with the remaining tortillas. 9.
