Christmas Pudding Rocky Road 🎄✨ A recipe I’ve been making for many years. The secret to this is the condensed milk - it gives it a gorgeous fudgy texture. I always love having Rocky Road over the Christmas period as it’s the most simple no-bake treat & keeps really well once made.  Full recipe is below, send this to someone who is looking for an easy treat to make over Christmas 🎅 2 pint pudding basin. Sprinkle with water and line with clingfilm (the water helps the clingfilm to stick at the sides). I used two sheets overlaid.  200g digestive or tea biscuits, broken up slightly  Pinch salt  200g milk chocolate  200g dark chocolate  100g butter  1 tin condensed milk  50g mini marshmallows  Add ins: (optional)  2 crunchies chopped  Handful of maltesers  Nuts - pecans, hazelnuts, pistachios etc all work great  To top  80g white chocolate  Edible holly/berries decoration  Melt the butter & chocolate together in a heat proof bowl in the microwave for 20 second bursts. Add the dry ingredients to a large mixing bowl. Once the chocolate & butter mixture is melted - immediately stir through the condensed milk, stirring until just incorporated. Don’t over mix as it can split. Pour into your dry ingredients and mix. Place into the pudding basin, packing it down firmly & smoothing over the top. Leave to set in the fridge for minimum two hours or ideally overnight. Melt the white chocolate. Remove from the basin/take off the clingfilm & pour the white chocolate on top, pooling it out at the sides so it drips down. Leave to set for 5 minutes then top with the decorations. This will keep perfectly for 2-3 days before you need it. Once sliced keep it in an airtight container in the fridge.  #chocolatebiscuitcake #rockyroad #christmaspudding #christmas #nobaketreat
