Cheesy Ranch Beef & POTATOES-COOKING WITH BRIGHT EYES Tender beef and hearty potatoes slow-cooked in a rich, creamy ranch sauce with plenty of melted cheese. It’s an easy comfort-food dinner perfect for busy days. Ingredients * 1½ lbs beef stew meat, cut into bite-size pieces * 4 medium potatoes, peeled and cubed * 1 packet ranch seasoning * 1 can cream of chicken soup * 8 oz Velveeta, cubed * 1½ cups shredded cheddar cheese * Salt and black pepper, to taste * Chopped parsley for garnish, optional Instructions 1. Place the beef and cubed potatoes in the slow cooker. Sprinkle the ranch seasoning over the top and season lightly with salt and pepper. 2. Add the Velveeta cubes and shredded cheddar cheese. 3. Spoon the cream of chicken soup evenly over everything. For a thinner, creamier sauce, add about ½ cup of water or beef broth. 4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is tender and the potatoes are fully cooked. 5. During the final 20–30 minutes, stir everything together well so the melted cheese and soup combine into a smooth, creamy sauce. 6. Taste and adjust the seasoning as needed. Garnish with chopped parsley and serve warm.
