In a cocktail shaker combine the fresh lime juice, pear juice (or pear nectar), and simple syrup. Add ice and shake vigorously for 10–15 seconds until chilled. Strain the mixture into your prepared glass. Hold a bar spoon upside down over the glass with the tip touching the inner wall just above the surface of the liquid. Slowly pour the Empress 1908 Gin over the back of the spoon so it rests gently on top of the juice layer. Top with a twisted lime wheel garnish. Serve immediately and instruct guests to stir before drinking.
