When I say I want a sandwich- this is what I mean 😍 I was able to get some baby solo garlic and it inspired me to make something pretty delicious- a crispy duck burger with marinated white beets, roasted solo garlic, and a crispy bun! Solo garlic is so cool because it grows as a single clove. There is small and large solo garlic. I’ve tried both and the smaller ones are much less astringent. The smaller solo garlic looks so much like little Hershey kisses 🥹 I roasted the solo garlic in olive oil with rosemary and salt. Then I roasted + shredded duck. I put the shredded duck in a deli cup and pressed it down to form a burger patty shape! I marinated some white beets with kimchi sauce, cilantro, olive oil, and green onions! White beets are so sweet and delicious and I thought would nicely with the duck. I found some crispy layered burger buns at the market the other day that I baked and they ended up looking like shells 😍 The final and most exciting part of this whole cook was frying the confit duck burger in duck fat. I was so nervous at first then excited that it didn’t fall apart or stick to the pan. I brushed on some apricot and cardamom jam then added the duck burger to those flakey burger buns with the mashed garlic and marinated beets! This was 100% the best burger I have ever made and I’m so so excited with how it turned out 😍 #sologarlic #duckburger
