Walnut Oat Cookies - I had been looking for a way to get some nutritional value in when the sweet cravings hit. This cookie manages to pack in 24g of protein PER cookie plus some fiber from the oats making this the perfect pregnancy treat or just a great high protein cookie. Recipe: 8oz (2 1/4 c.) walnuts chopped 5 Tbsp all purpose flour 1/4 tsp baking soda pinch of salt 2 eggs 1 tsp vanilla extract 1 c light brown sugar 1/3 c. rolled oats 1/2 tsp cinnamon Preheat your oven to 350 - combine baking soda and flour and cinnamon - in a stand mixer, mix the eggs and vanilla then add the sugar and beat to mix. Then add the flour and baking soda beat to incorporate then by hand fold in the chopped walnuts and rolled oats. On a parchment lined sheet tray, drop a heaping tablespoon of the dough spaced 3 per row since they will spread out. Bake at 350 for 10 minutes then allow to cool on an oven rack before enjoying!
