How to Cook & Eat Artichokes When choosing an artichoke, look for one that is vibrant green with tightly packed leaves. It should feel heavy for its size and make a slight squeaking sound when gently squeezed. Ingredients • 2 medium artichokes • 2–3 lemons • 3–4 whole garlic cloves • 1 teaspoon salt Garlic Butter Dip • 4 tablespoons melted butter • ¼ teaspoon garlic salt, or to taste • Fresh lemon juice, to taste Instructions 1. Fill a large bowl with ice water. Squeeze in 1 lemon and add the lemon halves. 2. Trim all but about ½ inch of the stem and rub the cut stem with lemon. Cut about ½–1 inch off the top and rub the cut surface with lemon. Use kitchen shears to snip the thorny tips from the leaves and rub the cut tips with lemon. Place the artichokes in the lemon ice water while you finish prepping. 3. If using a steamer basket, add enough water to a large pot so it sits just below the basket. If not using a steamer basket, add 1–2 inches of water to the pot. Squeeze in 1 lemon and add the lemon halves, garlic cloves, and salt. 4. Place the artichokes stem-side down in the steamer basket, or directly in the pot if not using a basket. Cover and bring to a boil over medium-high heat. 5. Reduce the heat to medium-low and maintain a gentle simmer for 30–40 minutes. Start checking around the 30-minute mark. 6. The artichokes are done when an outer leaf pulls away with a gentle tug and a knife slides easily into the base near the stem. 7. Remove the artichokes and place them upside down on a paper towel to drain. 8. Pull off the leaves, dip the base in garlic butter, and scrape the tender flesh off with your teeth. 9. Once you reach the center, pull out the pale inner leaves and scrape out the fuzzy choke with a spoon. 10. The heart and stem are edible. Dip them in the garlic butter and enjoy.
