If you meet online a first date is just a meet and greet, not even a real date. Before apps you never went to dinner with a random person. You had already met and talked to them - at work, at a bar, at a friend’s party, at school, at the grocery store, etc - and knew you could have a good conversation and there was mutual attraction before a date was set up. That initial meeting is missing from online dating.

This is a great mentality to have. It's impossible to know if it's a great match after 1 date. Each date should look for "do I want to continue to get to know this person? " or "Could there be some potential here?" NOT "Do they tick off every box"
