@welcometoangieskitchen: Brown Butter Oatmeal Chocolate Chip Cookies / Ingredients: - 165g unsalted butter (2/3 cup + 1 tablespoon) - 100g light brown sugar (1/2 cup) - 100g granulated sugar (1/2 cup) - 2 tablespoons of heavy cream (32% fat content) - 1 teaspoon vanilla bean powder or vanilla bean paste - 1 large egg + 1 large egg yolk - 100g old fashioned rolled oats (1 cup + 1/4 cup) - 200g all purpose flour (1 cup + 1/2 cup + 2 tablespoons) - 1/2 teaspoon baking powder + 1/2 teaspoon baking soda - 1 teaspoon fine sea salt - 1 teaspoon ground cinnamon - 100g milk chocolate chips (2/3 cup) - 100g dark chocolate chips (2/3 cup) Instructions: 1. First, you are going to brown the butter. 2. Add the butter to a saucepan and let it melt over medium heat. 3. Once melted, let it cook over low to medium heat, stirring continuously, until the butter browns and starts smelling very fragrant and nutty. 4. As soon as the butter is browned, transfer it to a large bowl and let it cool for 15 minutes. 5. After 15 minutes, it’s time to prepare the cookie dough. 6. For the cookies, mix together the brown butter, light brown sugar and granulated sugar. 7. Then add the egg yolk, vanilla and heavy cream. Mix everything together until fully incorporated. 8. Next, add the flour, baking powder, baking soda, salt, cinnamon and old-fashioned oats, and fold everything together until just combined. 9. Lastly, fold in the dark chocolate chips and milk chocolate chips. 10. Scoop out 14 equal-sized cookies onto a baking tray lined with parchment paper. 11. Cover with plastic wrap and place in the fridge for 30 minutes to chill. 12. After 30 minutes, preheat the oven to 180°C and line a large baking tray with parchment paper. 13. Place the cookies onto the large baking tray, leaving some space between them. I always bake four cookies per tray so they have enough space to spread. 14. Top with a few more chocolate chips and bake in the preheated oven for 12 minutes. 15. Once ready, take them out of the oven and let them cool on the tray for 5 minutes.
