@thehannahbriggs: Taco Soup Ingredients - 1lb lean ground beef - 1 yellow onion, diced - 3 cloves garlic, minced - 1 jalapeño, diced (seeds removed) - 2 tbsp tomato paste - 2 tbsp taco seasoning or (1 tbsp chili powder, 2 tsp cumin, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp kosher salt, ½ tsp black pepper, ½ tsp smoked paprika, ½ tsp oregano) - 1 (28 oz) can Rotel diced tomatoes with green chiles - 1 (15 oz) can tomato sauce - 3 cups beef broth - 2 (15 oz) cans beans, rinsed and drained (I use black and pinto) - 2 cups frozen corn - Juice of ½ lime - Additional water or broth, if desired - Salt to taste Instructions Heat a large stock pot over medium-high heat. Add the ground beef and cook until browned and no pink remains. Drain any excess fat. Add the onions and jalapeño to the meat and cook until the onions become slightly translucent. Reduce the heat to medium and add the garlic, tomato paste, and spices. Cook for about 1–2 minutes to allow the spices to bloom. Add the Rotel diced tomatoes, tomato sauce, beef broth, beans, and corn. At this point, add another ½–1 cup of water if desired for a more brothy consistency. Bring the mixture to a simmer, then cover and reduce the heat to medium-low. Allow it to simmer for 10–15 minutes. Uncover, add the lime juice, and simmer for another 5 minutes.
