We learned this simple, rustic Bolzano apple cake in northern Italy, from home cook Franca Giuliani. The magic was in its throw-it-together simplicity and ease almost of a pancake; and, similarly, the cake puffed slightly, like a Dutch baby, around the pile of thin-sliced apples.
