![ep 2: copycat costco red velvet mini cakes ♥️ we always get these on our costco runs but i finally recreated them! paired perfectly with a @Bloom Nutrition green drink 💚recipe below ⬇️ 1.25 cup flour 1 cup sugar 1/4 cup cocoa powder 1/2 tsp baking soda 1 stick butter (room temp) 2 eggs 1/2 cup sour cream 1/4 cup milk optional: food coloring 1 pack of cream cheese (room temp) 1 tbsp butter (room temp) 3/4 cup powdered sugar 1. mix sugar and butter until lightly and fluffy, then add in milk and sour cream. if you would like the cakes to be more red you can add food coloring here. mix until just combined. 2. add in all the dry ingredients and mix until just combined. 3. fill baking molds 2/3 of the way. bake at 350F for 20ish min (longer for bigger cakes) or until when you stick a tooth pick in the cake it comes out cleanly. 4. to make the frosting beat everything together until smooth, then frost the cake while the cupcakes are still slightly warm.
