This actually explains monopoly more than you think. Imagine the girl that friend zoned being a company, they didn't have any competition, therefore she never had to try, and she never really had much of a reason to try anyway, but when this other person was mentioned, she suddenly felt like she had to try, this is called market pressure. And now she actually has interests in growing(in this case perchance growing their relationship?) because she's got the feeling that she might actually have to try. And on a more psychological approach, this isn't just purely romantic, perhaps she may be wanting your attention because the feeling of how fast you've moved on might've hurted her ego, or she might be sad that you aren't giving her any more attention now(also called the Toddler effect where they are losing possession of your attention). This could also be called as memetic desire, which is where a person didn't see value in you initially, but onced they learned someone else wants you they perhaps finally found value within you. This could also be called Psychological reactance, where she initially felt that you were always available and free for her to take, but once she's felt that freedom being threatened she may suddenly start having interest in you after actually having to try.
