@helentaylorrr: the best kind of dates lol x (for 2x portions or 1 if you want haha) you’ll need: • 6 pitted dates • 50ml hot milk (i used whole) • 1 banana • 1 egg • 1/2 cup oats (about 40g) • 1tsp baking powder (for the elle gibson peanut toffee sauce): • 3tbsp smooth peanut butter • 2tbsp honey / maple syrup • 3-4tbsp any milk (add gradually) (to serve): • greek yogurt method: 1. begin by placing the dates and milk in a medium sized bowl and begin squashing the dates with a fork. trust the process and after a few minutes, you should form a paste (it doesn’t need to be completely smooth!). 2. now add the banana and roughly mash with a fork. 3. add the egg, oats and baking powder and mix until thoroughly combined. 4. pour the mixture into a greased / lined mini baking tin (i used a butter dish). bake at 180c / 160fan for 25 minutes. 5. meanwhile, prepare the sauce by placing the peanut butter, honey (or maple syrup if using) and milk in a small saucepan. 6. place on a low heat and whisk thoroughly until the mixture is silky smooth. add more milk if you think it’s too thick (the heat will help to thicken it). 7. remove the pudding from the oven and pour the toffee sauce all over. 8. serve whilst warm with a generous dollop of greek yogurt… enjoy🤍🤍🤍 #stp #yogurt #breakfast #EasyRecipes #dates
