How many loaves do you bake in a day? That's a lot of wasted flour if your not baking every day. You can feed a starter of 5g and still keep a healthy starter and when you're ready to bake, make a larger ratio. If you bake a lot, this is still good info for newbies. Don't waste flour feeding big ratios to start.

hi! I bought a dehydrated starter online and rehydrated it on Monday. I'm feeding it at a 1:1:1 ratio every 12 hours and it began doubling in size around day 2-3, now it's day 5 and it's tripled in size. is it good to bake with now or should I continue feeding? I also made a second starter out of the discard just as an experiment and I feed that one with rye flour. it's definitely as bubbly as my regular starter, but it's also stiffer and doesn't rise as much. is that due to it being a different flour and do I need to add more water or is it fine as is?
