Serves: 4 Prep time: 10 minutes Cook time: 25 minutes Ingredients For the chicken * 1½ lbs boneless skinless chicken breasts, sliced into thin cutlets * 1 tsp garlic powder * 1 tsp Italian seasoning * ½ tsp onion powder * ½ tsp paprika * ¾ tsp salt * ½ tsp black pepper * 1 tbsp olive oil * 1 tbsp butter For the pasta & sauce * 12 oz rigatoni * 3 tbsp butter * 5 fresh sage leaves, finely chopped * 5 cloves garlic, minced * ¾ cup chicken broth * 1½ cups heavy cream * 1¼ cups freshly grated Parmesan * ½ tsp Italian seasoning * ¼ tsp red pepper flakes, optional * Salt and pepper to taste * ½ cup reserved pasta water * Fresh Parmesan for serving Directions 1. Bring a large pot of salted water to a boil. Cook the rigatoni until just al dente. Before draining, reserve about ½ cup of the pasta water. 2. Pat the chicken dry and season both sides with garlic powder, Italian seasoning, onion powder, paprika, salt and pepper. 3. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Cook the chicken for approximately 4–5 minutes per side, depending on thickness, until golden and cooked through. Transfer to a plate and let it rest. 4. Reduce the skillet to medium heat. Add the remaining 3 tablespoons butter. 5. Once the butter begins to foam, add the chopped sage. Cook for about 1 minute, until fragrant and the butter starts turning lightly golden. 6. Add the garlic and cook for another 30 seconds. Don’t let it burn. 7. Pour in the chicken broth and scrape the browned bits from the bottom of the skillet. Let it simmer for 2 minutes. 8. Add the heavy cream, Italian seasoning and optional red pepper flakes. Reduce the heat and gently simmer for 3–4 minutes. 9. Turn the heat to low and gradually stir in the Parmesan until completely melted. Add a splash of reserved pasta water until the sauce is silky and glossy rather than overly thick. 10. Add the rigatoni and toss until every piece is coated in that garlic-sage Parmesan sauce. 11. Slice the chicken into thin, even strips and arrange it over the pasta. 12.
