As a chef please never do this to your knives ever again 😅 start with the tip of your knife at the tip of the potato and push down if you need more pressure place your hand flat on the back of the knife blade and push down or place it in the oven or microwave to soften slightly then cut and cook to preference also double check your knife is sharp they dull after the first few months

Cut it in half the other widthwise first. Place cut end down and cut length wise. That way your food is flat when you cut. Much safer.
