@amanda__.please: Classic Jam Slice 🍑 Buttery, crumbly shortbread-style slice with a thick layer of jam in the middle. Ingredients: 250g butter, softened ¾ cup caster sugar 2 tsp vanilla 2¼ cups plain flour ¼ cup cornflour ½ tsp salt ¾ cup apricot jam Desiccated coconut, for sprinkling Method: Preheat oven to 170°C fan-forced and line a 20cm square tin with baking paper. Whack the softened butter, caster sugar and vanilla into a bowl and beat until nice and creamy. Chuck in the flour, cornflour and salt and mix until you have a soft dough. Press half the dough into the bottom of your tin. Get it nice and even. Spread the jam all over the top. Take the remaining dough, flatten little pieces between your fingers and pop them over the jam. Don't stress about making it perfect, just cover as much as you can. Sprinkle some coconut over the top. Pop it in the oven for 35–40 minutes, or until lightly golden around the edges and on top. Let it cool completely in the tin before slicing.
